HOW TO PAN FRY SALMON
1. Prepare your salmon, make sure to they're dry and room temperature. If they're still a little wet, pat them with a paper towel.
2. Season your salmon with salt and pepper. Squeeze some lemon over each fillet.
3. Heat oil in a large non-stick pan over medium-high hot. Alternatively, you can also use a cast-iron skillet.
4. Once the oil is shimmering and is already hot, reduce the heat to medium and carefully place your salmon fillet into the pan, skin side down (or flesh side down).
5. Press them lightly with a spatula to the surface to avoid them from curling up, hold the spatula down for a few seconds.
6. Sear the salmon for 3 to 4 minutes until crispy and golden brown. Flip the other side and fry for 2 minutes. You can add here butter, the remaining lemon, and seasoning depending on your preference.
7. Baste the salmon fillet with butter and lemon juices on your pan. Fry for another few minutes until you reach your desired doneness. Make sure not to over fry your salmon. And you're done!
ALTERNATIVES TO SALMON
Not a fan of Salmon? You can use any white fish or fish fillets, fry them or season them - the choices are endless. Since the rasta pasta is a very flexible dish, you won't have a hard time pairing it with various meats. You can even use canned tuna if that's what's available to you.
WHAT MEATS CAN BE USED FOR RASTA PASTA
The best thing about rasta pasta is you can basically use any kind of meats. Here are some ideas:
CHICKEN - Baked Lemon Pepper Chicken
This one-pan baked lemon pepper chicken is perfect if you want something that is healthier and light compared to fried chicken. Since it's all made in one pan, it's easy to cook and will also save you time cleaning! Speaking of cleaning, we've made a video about how to clean your chicken.
OXTAILS - Jamaican Oxtail Stew
A flavourful and rich dish that will elevate your pasta. Oxtails have super fatty meat best made with Caribbean spices. One of the best dishes to make on special occasions.
SHRIMP - Southern Shrimp and Grits
Here's a classic southern dish with shrimp, turkey, and bacon on top of creamy cheesy grit sauce in creole sauce. If you're looking for something spicy, cheesy, and creamy; this is the fitting recipe to make with rasta pasta!
SALMON - Honey Garlic Salmon
Looking for something fresh and light? You can make this if you love herbs and if you have some time, marinating the salmon overnight or for a few hours will highlight the herbs and most especially, the salmon.
CAN YOU MAKE AHEAD THE ROUX SAUCE?
YES! You can definitely make the roux sauce ahead. Store it in an airtight container in your refrigerator and it should last you a week or more. If you're ready to cook it with your pasta, you can heat it up in a pan or if you're in a hurry, microwave it.
