Spaghetti for breakfast? Yes, please. Haitian Spaghetti (Espageti) is a traditional Haitian spaghetti meal usually eaten for breakfast. It's flavor rich with fresh vegetables, herbs, and different kinds of meats. The best part? It's so easy and quick to make!
Haitians pride themselves on using fresh herbs and vegetables to ensure all of our meals are fresh. This recipe can easily be a one-pot meal, although, I like to create the sauce in a different pan. We use our all-time favorite Epis seasoning and tomato paste to create a sauce for the pasta. This is the Haitians popular technique when cooking and the smell is one you can never forget.
How To Make Haitian Spaghetti
STEP 1: OLIVE OIL, EPIS & TOMATO SAUCE - In a large pot on medium heat, add ½ cup of olive oil and fry epis and tomato paste together until it picks up color.
STEP 2: VEGETABLE & MEATS - Next, add all your vegetables such as onions, tomatoes, thyme, bell pepper, scotch bonnet pepper with cloves, chicken bouillon, salt, and ½ cup of water. Also, add in the turkey now for more flavor we will add the herring fish later on so it doesn't get too tough. Cover for 20 minutes on low high heat until sauce has thickened and vegetables become a bit tender. If needed add more water little by little.
STEP 3: PASTA - After 20 minutes, finally, add the pasta into the sauce you've made. Let everything continue to cook together for another 15 minutes. Serve hot and joy!
Haitian Tomato Sauce
Do you prefer your spaghetti to have more sauce or are you making more for later? The best way to do it is to cook the tomato paste and epis (Haitian seasoning) together until it picks up color then add it into the pasta.
CAN YOU COOK THE SAUCE IN ADVANCE?
Once you've got a taste of this Haitian spaghetti, I'm sure you'll be having it frequently! So the answer is yes, you can definitely cook it in advance, and cooking the sauce will surely come in handy for those moments.
WHAT MEAT CAN YOU ADD TO THIS RECIPE?
One thing I love about Haitian Spaghetti is that it's very flexible. You can replace the smoked turkey with chicken, beef, pork, or even fish! Want to make this spaghetti vegan-friendly? Just take out the smoked herring fish and replace the smoked turkey with meat alternatives like tofu or any other that you prefer.
WHEN TO SERVE HAITIAN SPAGHETTI
This meal is traditionally served for breakfast but you can surely serve it any time. For lunch, dinner, as a snack; as an everyday meal or for a special occasion with families and friends.

- 1 lb smoked turkey
- 6 pcs smoked herring fish
- ½ cup olive oil
- 1 bell pepper half or red and green
- 1 scotch bonnet pepper
- 1 onion
- 2 tomatoes
- 6 thyme
- 5 cloves
- ½ cup water
- 5 tablespoon tomato paste
- 2½ tablespoon epis (Haitian seasoning)
