Yellow rice and Red beans is a caribbean recipe seasoned with sazon, knors and boiled with chicken stock to add more flavor. This recipe is quick and easy to make and will be your go to dish that you cannot live without!
Red Beans and Rice Ingredients:
Olive oil – So the rice doesn’t stick together add enough oil. vegetable oil can be substituted.
Green onion – I use green onion in all my recipes as this is how I was taught from my mum. It adds a mild but sweet flavor that I love.
Canned red kidney beans – Goya canned beans works great for this recipe. Small or large kidney beans work you can even any other type of beans you like.
White rice – Long grain rice is best to use and is always my go to.
Sazon – Create the orange/yellow color to your rice by adding sazon which also gives you a taste of latin Caribbean rice.
Chicken stock - Add more flavor to this dish by using chicken stock instead of water. If you don’t have it mix hot water with knors seasoning and let it sit for 5 minutes.

Red Beans and Rice Recipe
The prep is easy for making this rice, the hardest part overall is just waiting while it simmers. It’s one of those recipes that can be paired with Butterflied Roast ChickenorPepper Steak.
STEP ONE: Heat up your pot on medium high heat. Add in your scallion and cook on both sides until it has browned. Make sure to not burn it or the whole batch of rice will taste burnt!
STEP TWO: Add in your beans and fry for about 3 minutes then add in the rice and cook for another 3 minutes constantly turning so it doesn’t stick to the pot.
STEP THREE: Season the rice with sazon, knors seasoning and salt.
STEP FOUR: Throw in your chicken stock and bring your fire to high heat until the water is almost dissolved. Quickly cover it and bring it down to low heat and allow to steam for 30 minutes. Fluff the rice using a fork and enjoy !
This is one of my family’s favorite rice recipe. Being that it kind of resembles Puerto Rican rice and gives us that Caribbean feel we love so much, it’s also super quick, delicious and the kids love it!
Can I double the batch?
Yes, this can be double tripled by how many guests you need to feed. Make sure if you’re adding more rice you are also adding more liquid. The rule of rice is for every 1 cup of rice its 1 ½ cups of liquid or so. Measure using your best judgement as its better to add less than more.
Can I Freeze It?
Yes. Freeze rice up to 3 months. Thaw overnight (or even 2 days for a full batch) in the refrigerator.
