Chocolate Chip Pumpkin Bundt Cake is moist, delicious and incredibly easy to make! This will become your favorite go-to fall dessert.
This Chocolate Chip Pumpkin Bundt Cake is surprisingly easy to make and the mini chocolate chips is the perfect flavor compliment to the pumpkin.
I used mini chocolate chips in this recipe but any of your favorite topping will work perfectly fine! Have a slice of this delicious pumpkin loaf with your morning coffee for a beautiful start to your fall day!
How do you make Pumpkin Cake?
The process couldn’t be easier! The ingredients are all kitchen staples like flour, spices, vanilla, and eggs. Oil is the fat used in this pumpkin cake, so you’re guaranteed a super moist cake from the start.
If you’re trying to cut down the calories, you can sub applesauce for half of the oil. Just as moist!Preheat oven to 350˚F. Using cooking spray or oil, grease a bundt non-stick baking pan (like this one) .
1. In a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, cinnamon, nutmeg, pumpkin pie spice, instant vanilla pudding and salt.
2. In a second medium bowl, whisk together wet ingredients: large eggs, cup oil, pumpkin, sugar, brown sugar, until well combined.
3. Add wet ingredients to dry ingredients and whisk until smooth. Transfer to prepared baking dish and bake at 350˚F for 35-40 mins or until a toothpick poked in the center comes out clean.
Remove from the pan and let cake cool completely . Once cooled drizzle frosting on top .
My favorite part of course is adding those mini chocolate chips that adds a natural sweetness to the cake!
Brown Butter Frosting
When choosing what to top this pumpkin bread, I think of warm browned butter or whip topping. I always keep either browned butter or a tub of whipped topping in my freezer for times just like these when a quick and simple topping is all that is required.
Dessert is ready and no one will suspect how incredibly easy it was!
In 4 easy steps you can easily make this delicious nutty browned butter frosting. You can add more or less of the browned butter depending on your perference.
Cream Cheese Frosting will also makes a wonderful topping for this cake or you can just top each piece with a dollop of ice cream as well. This cake is so delicious that if you decide to serve it naked – that’s ok too!
Can I Freeze Pumpkin Bread
If you have some leftover pumpkin bread or if you want to save them for another day, you can freeze them. Wrap it in plastic wrap or an airtight container and freeze.
Once you’re ready to eat them, you can place it on your counter overnight to thaw. You can also reheat it in your oven if you want to warm it a bit.
