Spaghetti for breakfast? Yes, please. Haitian Spaghetti (Espageti) is a traditional Haitian spaghetti meal usually eaten for breakfast. It's flavor rich with fresh vegetables, herbs, and different kinds of meats. The best part? It's so easy and quick to make!

Ingredients
  

  • 1 box spaghetti
  • water according to pasta directions
  • salt
  • 1 lb smoked turkey
  • 6 pcs smoked herring fish
  • ½ cup olive oil
  • 1 bell pepper half or red and green
  • 1 scotch bonnet pepper
  • 1 onion
  • 2 tomatoes
  • 6 thyme
  • 5 cloves
  • ½ cup water
  • 5 tablespoon tomato paste
  • tablespoon epis (Haitian seasoning)

Instructions
 

  • In a large pot on medium heat, add ½ cup of olive oil and fry epis and tomato paste together until it picks up color.
  • Next, add all your vegetables such as onions, tomatoes, thyme, bell pepper, scotch bonnet pepper with cloves, chicken bouillon, salt, and ½ cup of water. Also, add in the turkey now for more flavor we will add the herring fish later on so it doesn’t get too tough. Cover for 20 minutes on low high heat until sauce has thickened and vegetables become a bit tender. If needed add more water little by little.
  • After 20 minutes, finally, add the pasta into the sauce you’ve made. Let everything continue to cook together for another 15 minutes. In the meantime, if you need more sauce TIP – cook the tomato paste and epis (Haitian seasoning) together until it picks up color then add it into the pasta. Serve hot and joy!
