Equipment

  • Cask Iron Skillet
  • Tony’s Seasoning

Ingredients
  

  • 8 organic free range eggs
  • 2 cups Collard greens
  • ½ medium onion
  • 4 slices organic turkey bacon
  • ¼ cup heavy cream
  • ½ cup mexican cheese
  • 1 tablespoon Tony (all-purpose seasoning)
  • 1 scallion green onion
  • 1 teaspoon salt
  • 1 teaspoon Tonys on greens

Instructions
 

  • First, heat up your pan then add a little bit of olive oil. Add the onion and saute it for three to five minutes. While you're sauteing your onion, you can go ahead and season your egg.
  • Drop a tablespoon of salted butter then add the turkey bacon and let it cook. Once your turkey bacon have some color, add the collard greens. Season it with Tony's and salt. (If you don't have Tony's seasoning, you can use any seasoning that you like.)
  • Allow the pan to heat up a bit and get hot then add the egg mixed with the cream. Sprinkle some scallions, once it starts cooking on the slides, pull it in and add shredded cheese.
  • Cover it with a foil and leave it in for three to five minutes in low-heat. Lastly, you can put it on broil inside the oven or you can flip it. Let it cook for another three to five minutes and you're done!
