Ingredients
  

  • 2 tablespoon olive oil
  • 4 cup cooked long grain rice
  • 3 cloves garlic minced
  • ½ cup white onion
  • 1 bag frozen peas & carrots
  • 3 large eggs
  • 3 green onions thinly sliced, white and green parts divided
  • 1 teaspoon Kosher salt
  • 3 tbsp. sesame oil divided
  • 4 tablespoon low-sodium soy sauce or more

Instructions
 

  • Heat up a medium size pan. Add olive oil and rice and cook for 5 minutes
  • In the same pan form a middle space to fry garlic, onions, carrots and peas then again form space in the middle of the pan to cook the eggs. Cover if need to bring the temperature up for the eggs.
  • Add sesame oil, soy sauce, green onion and salt to taste.
  • Garnish with more green onions
